• 1 package extra firm tofu – squeezed and drained
  • 3 Tbsp. nutritional yeast
  • 1 Tbsp. dried parsley
  • 2 t. dried basil
  • 1 t. garlic powder
  • 1 t. onion powder
  • 1 t. salt
  • ½ t. pepper
  • 2 Tbsp. lemon juice

Place tofu in a mixing bowl and smash with hands or a potato masher.  Add all ingredients and continue to stir and smash.  Use in lasagna or shells or any recipe calling for ricotta cheese.
